Minestrone Soup
It's soup-y stuff again! When I was looking through my cookbook, realized I was trying to avoid choosing those recipes on cream-based soup. I just can't make myself to make one yet - finds it too sinful =P
Here's the recipe: (adapted from Eric Teo's Simply Soup)
Ingredients:
50g butter
2 tbsp olive oil
1 garlic, chopped
1 onion, diced
1 carrot, diced
2 celery, diced
100g of cabbage, chopped
2 zucchini, diced
2 potatoes, diced
3 tomatoes, diced
3 tbsp of tomato puree / tomato paste
1.5 litres of chicken stock
Method:
- Heat up a large pot. Add in olive oil and butter. Saute all the vegetables, except tomatoes till soft.
- Add in the tomato paste and tomatoes; stir till well-mixed.
- Pour in the chicken stock, and bring it to boil. Let it simmer for about 30 mins or until the vegetables are tender
