Minestrone Soup

It's soup-y stuff again! When I was looking through my cookbook, realized I was trying to avoid choosing those recipes on cream-based soup. I just can't make myself to make one yet - finds it too sinful =P


Here's the recipe: (adapted from Eric Teo's Simply Soup)

Ingredients:
50g butter
2 tbsp olive oil

1 garlic, chopped
1 onion, diced
1 carrot, diced
2 celery, diced
100g of cabbage, chopped
2 zucchini, diced
2 potatoes, diced

3 tomatoes, diced
3 tbsp of tomato puree / tomato paste
1.5 litres of chicken stock

Method:
  1. Heat up a large pot. Add in olive oil and butter. Saute all the vegetables, except tomatoes till soft.
  2. Add in the tomato paste and tomatoes; stir till well-mixed.
  3. Pour in the chicken stock, and bring it to boil. Let it simmer for about 30 mins or until the vegetables are tender
One thing great about the soup is that you can adjust the amount of vegetables and quantity to your liking. If you like carrots, by all means, add more :)
