Durian Puff

I've been crazy over choux pastry recently. They are so cute! Especially when they puff up into round balls. 

I like mine mini - so that you can easily pop them into the mouth. As it's the durian season, I've decided to pair the choux pastry with durian. *yum yum*






Here's the recipe:

Ingredients for Puff (adapted from j3ess kitch3n)
65g butter
50g milk
70g water
5g sugar (1 tsp)
90g cake flour, sifted
2 eggs, beaten

Method
1) Put butter, milk, water and sugar in a saucepan, and bring the mixture to boil.
2) Remove from heat, and using a wooden spoon, quickly stir the cake flour into
    mixture.
    Note: mixture reminds me of mashed potato at this point; stir till four is fully
    incorporated into mixture
3) Return saucepan to the stove. Using medium heat, keep stirring the mixture
    till it becomes a dough, and a thin membrane forms at the bottom of the
    saucepan. Remove from heat.
4) Allow mixture to cool for a short while, before adding in the beaten eggs. Eggs
    should be added in bit by bit.
    Note: It is normal for the mixture to curdle, but continue to stir on, and the
    liquid will slowly be incorporated into the dough. The dough is ready when it
    appears smooth, and the mixture falls off the wooden spoon to form a small
    triangle.
5) Using a teaspooon, drop spoonful of dough onto a lined baking sheet.
    Remember to keep the dough at least 2cm apart. Wet your fingertips with
    water, and use it to smooth out weird shape/ flatten the tip of the dough.
    Note: If you want a huge puff, can use a tablespoon instead.
6) Bake in preheated oven at 200 degree celsius for 15 mins. Reduce the heat to
    170 degree celsius and bake for another 10 mins. Turn off the oven and allow
    the heat to bake the puff for another 10 mins.

Ingredients for Durian Fillling
200ml whipping cream
approx 320 -350g of durian (de-seeded and pureed)

Method
1) Using an electric mixer, whip the cream till soft peaks.
2) Fold in the durian using a spatula. The amt of durian to add depends on how
    strong you want the durian taste to be.

To assemble the durian puff, cut the puff in half using a serrated knife. Scoop the durian filling in. Chill the puff, and it's ready to be served. Enjoy!
